If you are one of those people that are on a restrictive eating diet like the keto or the low-carb diet, but you still want to enjoy sweet treats that actually taste good, this recipe is perfect for you! These Keto Spice Cake Cupcakes are perfect for a morning or afternoon snack! 

This recipe is from the amazing Marcia K. She says "This recipe was given to me by a friend who shares my enjoyment to create perfect desserts that are “cheat free”.

What You Need

      Ingredients

      • 4 Tbs butter softened
      • ¼ Cup monk fruit
      • ⅓ cup Swerve granular or confectioner
      • 1 tbsp cinnamon
      • 1 tsp ginger
      • ¼ tsp cloves, 
      • ¼ tsp nutmeg
      • 1 tsp vanilla
      • 2 eggs
      • ½ cup sour cream or heavy cream
      • ¼ tsp salt
      • 2 cups almond flour
      • 2 tsp baking powder
      • Spice mix

        Preparation

        1. Mix butter, monk fruit and Swerve with hand mixer for 20 seconds. 
        2. Beat the eggs, the vanilla and ½ cup sour cream or heavy cream in a bowl. 
        3. Pour the cinnamon, the ginger, the cloves, the nutmeg and the salt into a small bowl. 
        4. In a large bowl mix the cups of almond flour, the baking powder and the spice mix, by hand. 
        5. Add the wet ingredients and slowly mix them together with a spatula until they are smooth.
        6. Pour into cupcake forms and bake at 350° for 15 min or until a “toothpick test” comes out clean. 
          This recipe is a cross between a cupcake and a muffin, so you might want to dress it up with a wonderful cream cheese frosting.

          This is a great topper for the Spice Cake Cupcakes! 

          1. 1 Brick cream cheese in a bowl
          2. Blend to taste with about ½ cup confectioners *Swerve sugar substitute. 
          3. 1 tsp vanilla
          4. About 2 tbsp liquid. Either orange juice, milk or cream. Blend until frosting consistency.  It should be spreadable.
            And that's all there is to it! Frost cooled cupcakes or cake.
